The farm
In Lavagna, in the heart of Liguria just few steps from the sea, we have our roots in regenerative agriculture, which we apply both in our vegetable gardens and on the surrounding land.
We practice soil regeneration by limiting tillage, using a few hand tools and our four hands, and relying on ancient cultivation techniques such as plant associations. This commits us to preserving the richness of the soil and its microorganisms. Increasing biodiversity plays a key role in a healthy and balanced ecosystem. Step by step we are making this possible by creating hospitable environments for all living things and promoting the diversity of plants, shrubs, and flowers. This work results in a more sustainable circle; by cooking and storing the food we produce, nothing is wasted.
The kitchen
The principles we apply on the land go hand in hand with the kind of cuisine we want to convey. We mainly use our own products, thus offering a vegetarian cuisine that is based on constant curiosity and research, translating into culinary creativity. Fire is the main method of cooking; an ancestral cooking method that gives dishes a unique and authentic flavour.
The villa
Villa Tiscornia is located in Lavagna, within two hectares of land, filled with centuries old olive trees and vegetable gardens. The house comprises a large living room, kitchen, four bedrooms and two bathrooms. In addition there is a bunk bed for kids in a passage room. The sea is 1km away, if you’re a nature lover we are next to the regional park of Portofino, and just an hour from Cinque Terre. Book the experience.
About us
We are Segundo and Caterina, the founders and faces of Radical. From Argentina and Switzerland, we met in Belgium, thanks to our shared passion for gastronomy. After gaining experience in restaurants and kitchens in different parts of Europe and South America, we decided to combine our passion with a commitment to sustainability. Radical is the result of this union, and is characterized by a deep respect for the earth, genuine ingredients, and culinary creativity. We believe that the restaurant industry and sustainable agriculture are interdependent and, above all, fundamental to creating a more fair, healthy, and sustainable food system.
